Homemade Apple Sauce Turned Cupcakes

**Before I hop into today’s recipe I wanted to thank you all for your kind comments, tweets and texts on Tuesday nights post.  In some weird way, it gave me a little bit of closure and it felt good to put my feelings down on paper(well the blog but ya know what I mean). **

Remember when I mentioned I have a produce hoarding problem?   Well my dad, the instigator that he is, dropped off a Jewel sized basket of apples from his tree off in my garage.  He’s a bandit, I swear.  With Mikes nagging to use them up, I set out on a two day adventure of making applesauce.  Now I gave  most of it away but since I had a small container to use up I decided now was the time to make apple cider cuppycakes.

The only substitution I made to the recipe was the applesauce since mine was homemade<–brag much?  Anyways, I swear to you it’s the simplest process on the planet. Place 4-5 chopped apples in a sauce pan with two cups of water, two tablespoons of honey and a few hefty shakes of cinnamon.  Cook on medium until soft and puree with hand blender.  If you do have a hand blender, I highly recommend them because you can easily blend right in the pot/pan you are cooking in. If you are like me and dishwasherless, less dishes is always the best option.

Instead of smearing the frosting on top since I don’t have a pastry bag and tip, I used a plastic baggie to pipe on the frosting and although the first few looked a little rough they ended up looking nice and purrrty.
